Sweet & Spicy Easter Hot Honey Pickled Carrots

  • 5 medium carrots, peeled and cut into sticks
  • 1 cup apple cider vinegar
  • 1/2 cup water
  • 1/4 cup honey
  • 2 teaspoons red pepper flakes
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns
  • 2 garlic cloves, smashed
  • 1 teaspoon mustard seeds

Instructions

  1. Combine apple cider vinegar, water, honey, red pepper flakes, salt, black peppercorns, garlic, and mustard seeds in a saucepan.
  2. Bring to a simmer over medium heat, stirring until the honey dissolves.
  3. Place the carrot sticks in a jar and pour the hot brine over them.
  4. Let it cool to room temperature, then cover and refrigerate for at least 24 hours before serving.

Notes

For best flavor, let the carrots mature for a few days in the fridge. Adjust the amount of honey for a lower-calorie version.
