Swiss Chard Salad Wraps with Apple Slaw

A delicious and healthy dish featuring Swiss chard and a crunchy apple slaw, perfect for lunch or a light dinner.

  • 810 Swiss chard leaves, stems removed
  • 3 cups cabbage slaw mix
  • 1 large apple, cored and chopped
  • 2 tablespoons sunflower seeds
  • 2 green onions, chopped
  • 23 tablespoons chopped parsley
  • 1 teaspoon lemon juice
  • 1/4 cup crumbled feta cheese (optional)
  • 1 cup cooked gluten-free grain (quinoa, rice, etc.) (optional)
  • 1/2 cup plain Greek yogurt (or non-dairy yogurt or mayo for vegan option)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons apple juice or white grape juice
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon onion powder
  • 1 tablespoon honey or agave syrup (for vegan option)
  • Sea salt and black pepper, to taste

Instructions

  1. Remove the stems from the Swiss chard leaves and soften them in boiling water for one minute. Transfer to an ice bath to stop the cooking.
  2. In a small bowl, whisk together the dressing ingredients: Greek yogurt, apple cider vinegar, apple juice, Dijon mustard, onion powder, honey or agave syrup, and a pinch of salt and pepper.
  3. In a large bowl, mix together the cabbage slaw, chopped apple, sunflower seeds, green onions, chopped parsley, and lemon juice.
  4. Add the dressing to the slaw mixture and toss everything to combine.
  5. Take a Swiss chard leaf, place about 1/4 to 1/3 cup of the slaw mix near the top edge, fold the sides inward, and roll it tightly.
  6. Repeat for each Swiss chard leaf and store in a sealed container in the fridge.

Notes

These wraps are versatile and can easily be made vegan by substituting dairy ingredients.
