Tangy Pickled Eggs with Sausage and Onions

  • 6 hard-boiled eggs
  • 1 cup pickling brine
  • 1 cup cooked sausage, sliced
  • 1 onion, thinly sliced
  • 1 tablespoon mustard seeds
  • 1 tablespoon peppercorns
  • 2 cloves garlic, minced

Instructions

  1. Place hard-boiled eggs in a jar.
  2. In a saucepan, heat the pickling brine along with mustard seeds, peppercorns, and garlic.
  3. Add the sliced sausage and onions to the jar.
  4. Pour the hot brine mixture over the eggs and other ingredients.
  5. Seal the jar and refrigerate for at least 24 hours before serving. Enjoy!

Notes

These pickled eggs store well in the refrigerator for 2 to 4 weeks. They can also be used in salads or charcuterie boards.
