Teriyaki Shrimp and Pineapple Rice Stack

A delightful dish combining the sweet and savory notes of teriyaki sauce with juicy shrimp and the tropical taste of pineapple, perfect for dinner or gatherings.

  • 2 cups rice
  • 3 cups chicken broth
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon garlic powder
  • 1 pound shrimp, peeled and deveined
  • 1/4 cup teriyaki sauce
  • 1 tablespoon honey
  • 1/2 teaspoon grated ginger
  • 1 (15 oz) can pineapple chunks, drained

Instructions

  1. In a pot, combine the rice, chicken broth, soy sauce, sesame oil, and garlic powder. Bring it to a boil, reduce the heat, cover, and let it simmer for 18-20 minutes until cooked and fluffy.
  2. In a pan over medium heat, combine the shrimp, teriyaki sauce, honey, and ginger. Cook until the shrimp turns pink, about 5-7 minutes.
  3. In a serving dish, layer the cooked rice, then the shrimp mixture, and top with pineapple chunks. Serve warm.

Notes

Garnish with sesame seeds or green onions and serve with a fresh salad or steamed vegetables. Leftovers can be stored in an airtight container for 2-3 days.
