Thai Coconut Lime Cooler

A light, refreshing drink with bright lime and creamy coconut, perfect for hot days.

Ingredients

  • 1 can (14 oz) coconut milk
  • 1 cup coconut water
  • Juice of 3 limes
  • 23 tbsp palm sugar or honey

Instructions

  1. Combine the coconut milk, coconut water, lime juice, and palm sugar or honey in a blender.
  2. Blend until well mixed.
  3. Serve over ice and enjoy.

Notes

For a diabetic-friendly version, swap palm sugar with a non-nutritive sweetener. Can be frozen in ice cube trays for smoothies.
