Thai Peanut Chicken Noodle Bowls

Delicious and simple Thai Peanut Chicken Noodle Bowls featuring tender chicken, colorful veggies, and creamy peanut sauce.

  • 8 oz rice noodles
  • 1 lb boneless, skinless chicken breast, sliced
  • 2 tbsp vegetable oil
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1/2 cup green onions, sliced
  • 1/2 cup peanuts, chopped
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1/4 cup water
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook rice noodles according to package instructions. Once done, drain the noodles and set them aside.
  2. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat.
  3. Add the sliced chicken to the skillet. Season it with a pinch of salt and pepper. Cook until golden brown and fully cooked.
  4. Add the sliced bell peppers and julienned carrots to the skillet. Sauté until tender.
  5. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, and water until smooth.
  6. Add the cooked rice noodles to the skillet with the chicken and vegetables. Pour the peanut sauce over the top. Toss everything together to combine and heat through.
  7. Serve garnished with sliced green onions, chopped peanuts, and fresh cilantro.

Notes

For a vegetarian version, substitute chicken with tofu. This dish can be made ahead of time and reheated.
