Jiffy Cornbread

A quick and easy recipe for moist and fluffy cornbread using Jiffy Corn Muffin Mix, perfect for any meal.

  • 1 box Jiffy Corn Muffin Mix
  • 2 large eggs
  • 1 cup milk (or buttermilk)
  • 1/3 cup melted butter
  • 12 tablespoons sugar (optional)
  • Optional add-ins: sour cream, honey, cheese, jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C) with a cast-iron skillet inside.
  2. In a large mixing bowl, beat the eggs and add in the milk and melted butter. Stir until well combined.
  3. Slowly add the Jiffy Corn Muffin Mix to the wet ingredients, stirring gently until just combined.
  4. If using, fold in any optional ingredients like sour cream or cheese.
  5. Carefully grease the hot skillet and pour in the batter.
  6. Bake for 15-20 minutes, until golden brown and a toothpick comes out clean.
  7. Let cool for 5 minutes before slicing and serving.

Notes

For additional moisture, consider adding a spoonful of mayonnaise or a dollop of sour cream.
