Toasted Coconut Horchata

A refreshing drink that combines traditional horchata with the tropical flavor of toasted coconut, perfect for warm days or as a midday treat.

Ingredients

  • 1 cup rice milk
  • 2 tbsp toasted coconut flakes
  • 1 shot espresso
  • 1/4 tsp cinnamon

Instructions

  1. In a blender, combine the rice milk and toasted coconut flakes.
  2. Blend the mixture until smooth.
  3. Pour the blended mixture into a saucepan and heat it over medium heat, stirring occasionally.
  4. When warm, add the shot of espresso and stir well to combine.
  5. Serve the horchata in a glass, topped with extra toasted coconut flakes and a sprinkle of cinnamon.

Notes

Can be served chilled over ice or warm. Store in an airtight container for 2-3 days in the refrigerator.
