Traditional Dublin Coddle

A warm and hearty Irish stew made with sausages, bacon, potatoes, and onions, perfect for cold days and gatherings.

Ingredients

  • 8 ounces sausages (pork or beef)
  • 8 ounces bacon
  • 4 large potatoes (sliced)
  • 2 onions (sliced)
  • 4 cups chicken broth
  • 2 tablespoons fresh parsley (chopped)
  • Salt and pepper to taste
  • 1 teaspoon mustard grains (optional)

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside.
  2. In the same pot, brown the sausages on all sides and then remove them as well.
  3. Layer the sliced potatoes and onions in the pot.
  4. Add the sausages and crumbled bacon on top.
  5. Pour in the chicken broth and season with salt, pepper, and mustard grains if using.
  6. Bring to a boil, then reduce heat and simmer for about 60 minutes until everything is cooked through and the flavors meld.
  7. Stir in chopped parsley before serving.

Notes

Serve hot with crusty bread for soaking up the broth.
