Turmeric Black Pepper Chicken with Asparagus

  • 3 tablespoons honey
  • 1 teaspoon soy sauce
  • 2 teaspoons kosher salt (divided)
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 ½ teaspoons ground turmeric
  • 1 pound boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 1 tablespoon canola oil
  • 12 ounces asparagus (trimmed and sliced on an angle into ½-inch pieces)
  • Cooked rice (for serving)

Instructions

  1. In a small bowl, combine the water, honey, soy sauce, 1 teaspoon of salt, and black pepper. Stir until the honey dissolves completely and set aside.
  2. In a medium bowl, whisk together the all-purpose flour, ground turmeric, and remaining 1 teaspoon of salt. Add the chicken pieces and toss until evenly coated.
  3. Heat a medium nonstick skillet over medium-high heat and add canola oil. Once hot, add the coated chicken and cook until golden brown on both sides (about 2-3 minutes per side).
  4. Add the sliced asparagus to the skillet and cook for 1-2 minutes until tender but still crunchy.
  5. Pour in the honey mixture and stir, scraping up any browned bits. Cook until the chicken reaches an internal temperature of 165°F and the sauce thickens (about 2-3 minutes).
  6. Serve the chicken and asparagus over cooked rice.

Notes

For a healthier option, serve over brown rice or quinoa. Can be made gluten-free with a different flour.
