Ube Bread Rolls

Delicious soft and fluffy ube bread rolls with a unique flavor from ube, a popular purple yam in Filipino cuisine.

Ingredients

  • 1/2 cup warm water (about 110°F)
  • 1 package active dry yeast (0.25 oz)
  • 1 tsp granulated sugar
  • 1/2 cup milk
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1/4 cup unsalted butter (room temperature)
  • 2 large eggs (room temperature and lightly beaten)
  • 4 cups all-purpose flour
  • 1 tbsp canola oil (or any flavorless oil)
  • 1/2 cup unsalted butter (melted and allowed to cool slightly)
  • 3 tbsp melted butter (for brushing)
  • 1/2 cup packed brown sugar
  • 1 1/2 cups unsweetened shredded coconut
  • 15 oz ube jam

Instructions

  1. In a measuring cup, stir warm water, yeast, and sugar until dissolved; let stand for about 10 minutes.
  2. In a saucepan, warm milk until bubbles form; mix in sugar, salt, and butter until melted; let cool to lukewarm.
  3. In a bowl, combine yeast mixture, milk mixture, and beaten eggs; add 1 1/2 cups of flour and stir; knead in remaining flour until smooth, about 8-10 minutes.
  4. Oil a bowl, place the dough inside, cover, and let rise until doubled, about 1 hour.
  5. Mix melted butter, brown sugar, and coconut in a bowl; spread in a greased baking dish.
  6. Roll out the dough on a floured surface, brush with melted butter, spread ube jam, roll tightly, and cut into 12 pieces; place cut side down in the baking dish, cover, and let rise for 30 minutes.
  7. Preheat oven to 375°F; bake for 20-25 minutes until golden brown.
  8. Cool slightly before serving.

Notes

You can use whole wheat flour for a healthier version or reduce the sugar.
