Ube Crinkles

Delicious, soft, and chewy Ube Crinkles that are vibrant in color and full of unique nutty flavor, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 7 oz ube jam or ube halaya, room temperature
  • 1/2 cup canola oil or vegetable oil
  • 2 large eggs, beaten, room temperature
  • 3 tsp ube extract
  • 1 cup confectioner’s sugar

Instructions

  1. In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, mix granulated sugar, ube jam, and oil until well combined.
  3. Add beaten eggs and ube extract to the mixture; stir well.
  4. Gradually add the flour mixture in thirds, mixing completely after each addition.
  5. Cover and chill the dough in the refrigerator for at least 240 minutes (4 hours).
  6. Preheat the oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  7. Roll chilled dough into small balls, about one inch in diameter.
  8. Roll each ball in confectioner’s sugar until fully coated.
  9. Arrange the coated cookie balls on the baking sheet, spacing them 1-2 inches apart.
  10. Bake for 10-13 minutes until they crack on top and appear matte.
  11. Cool the cookies on the pan for a few minutes, then transfer to a cooling rack.

Notes

Store Ube Crinkles in an airtight container for 3-5 days at room temperature. They can be frozen for longer storage.
