Ube Cupcakes

Delicious and vibrant ube cupcakes topped with fluffy ube whipped cream frosting, perfect for any occasion.

Ingredients

  • 2 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup canola oil or vegetable oil
  • 1 cup ube jam (1 heaping cup)
  • 3 tsp ube extract
  • 1 cup cake flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp unflavoured gelatine
  • 2 tbsp cold water
  • 1 cup heavy cream, chilled
  • 3 tbsp granulated sugar (for frosting)
  • 1 tbsp ube extract (for frosting)

Instructions

  1. Preheat your oven to 325°F.
  2. Line a cupcake pan with cupcake liners.
  3. In a large bowl, whisk the eggs, sugar, and oil until combined.
  4. Add ube jam and whisk until smooth.
  5. Mix in ube extract.
  6. Sift in cake flour, baking powder, and salt; fold gently.
  7. Scoop batter into cupcake liners, filling slightly over half full.
  8. Bake for 20-25 minutes, checking with a toothpick.
  9. Let cupcakes cool completely before frosting.
  10. For frosting, bloom gelatine in 2 tbsp cold water.
  11. Whip heavy cream with sugar and ube extract until medium peaks form.
  12. Dissolve gelatine in microwave for 10 seconds, then temper with whipped cream.
  13. Fold gelatine mixture into whipped cream until stiff peaks form.
  14. Frost cooled cupcakes with ube whipped cream frosting.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
