Ube Muffins

Delightful ube muffins blending the unique flavor of purple yam with comforting baked goodness, perfect for snacks, breakfast or dessert.

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup sweetened shredded coconut
  • 2 tablespoons butter, melted
  • 1 1/2 cups milk (1% or 2% skim, room temperature)
  • 1 1/2 cups granulated sugar
  • 2/3 cup canola or vegetable oil
  • 2 large eggs (room temperature)
  • 2 teaspoons ube extract
  • 4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup ube jam

Instructions

  1. In a small bowl, combine all ingredients for the coconut topping. Mix until evenly blended, then set aside.
  2. Preheat your oven to 350°F and line two muffin pans with muffin liners.
  3. In a large bowl, whisk together the milk, sugar, oil, eggs, and ube extract until combined.
  4. Sift the flour, baking powder, and salt directly into the wet ingredients. Gently stir just until blended; the batter should be lumpy.
  5. Fill each muffin cup about 1/3 full with the batter. Add a heaping tablespoon of ube jam on top.
  6. Top with remaining batter until muffin cups are about 2/3 full.
  7. Sprinkle the prepared coconut topping over the muffins.
  8. Bake for about 30 minutes, or until a toothpick comes out with minimal dry crumbs.
  9. Cool muffins in the pan for 10 to 15 minutes before transferring them to a wire rack.

Notes

Serve warm with coffee or tea. Can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
