Vampire Bite Red Velvet Cheesecake

A spooky yet delightful red velvet cheesecake, perfect for Halloween parties and themed gatherings.

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder
  • Red gel food coloring
  • 1/2 cup dark chocolate sauce

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Grease a 9-inch springform pan with non-stick spray or butter.
  3. Combine the chocolate cookie crumbs and melted butter in a bowl, then press into the bottom of the springform pan to form the crust.
  4. In a mixing bowl, beat cream cheese and sugar until smooth. Add cocoa powder and red gel food coloring, mixing until uniform.
  5. Add eggs one at a time, mixing on low, then add vanilla extract and combine.
  6. Pour the cheesecake filling over the crust, smoothing the top.
  7. Bake for 50-55 minutes until edges are set but center jiggles slightly.
  8. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  9. Before serving, drizzle dark chocolate sauce on top and slice.

Notes

Decorate creatively for Halloween with toppings like candy eyes or edible glitter.
