Vanilla Bean and Fresh Cranberry Butter

A delightful blend of tart cranberries and sweet vanilla bean, this creamy butter is perfect for spreading on toast or incorporating into your favorite recipes.

  • 1 bag of fresh cranberries (about 3 cups)
  • 1/4 cup honey
  • 1 tbsp vanilla bean paste

Instructions

  1. Add all ingredients to a small saucepan and place on medium heat.
  2. Stir continuously until the mixture reaches a bubbling simmer, then reduce heat to low.
  3. Cook on low until the cranberries fully break down and the mixture thickens, about 30 minutes.
  4. Remove from heat and let cool.
  5. Transfer the cooled butter into glass jars with lids and store in the fridge for up to 3 weeks or freeze for a couple of months.
