Brownies with Chocolate Ganache Frosting

Rich, chocolatey brownies topped with a smooth chocolate ganache frosting, perfect for any occasion.

  • 2 flax eggs (1 tbsp ground flax seed + 2.5 tbsp water per egg)
  • 1/2 cup creamy almond butter
  • 1/2 cup coconut sugar
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup melted vegan dark chocolate chips
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup gluten-free all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegan chocolate chips
  • 1/2 cup So Delicious Dairy Free French Vanilla Organic Coffee Creamer
  • 1 1/2 cups vegan dark chocolate, chopped
  • 1/2 cup vegan butter, softened
  • 1/2 tsp salt
  • 1 1/2 cups powdered sugar + more if needed
  • Crushed rose petals for topping (optional)

Instructions

  1. Prepare the flax eggs: Mix ground flax seed with water and let sit for 5-10 minutes until gel-like.
  2. In a large bowl, combine almond butter, coconut sugar, maple syrup, melted coconut oil, vanilla extract, and melted vegan dark chocolate chips. Mix until smooth.
  3. Add the flax eggs to the wet mixture and stir until combined.
  4. In another bowl, mix cocoa powder, gluten-free flour, baking powder, and salt. Whisk to avoid lumps.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Gently fold in vegan chocolate chips.
  7. Prepare an 8×8 inch baking pan with parchment paper if desired or grease lightly.
  8. Pour the brownie batter into the pan and bake at 350°F (175°C) for 25-30 minutes. A toothpick should come out with a few moist crumbs.
  9. Cool the brownies completely on a wire rack.
  10. Heat the dairy-free creamer until warm.
  11. Pour the creamer over chopped vegan dark chocolate and stir until smooth.
  12. In another bowl, beat softened vegan butter and salt, then gradually add the chocolate mixture and powdered sugar. Beat until fluffy.
  13. Spread the ganache over the cooled brownies and decorate with rose petals if desired.

Notes

These brownies can be served warm or at room temperature. Store in an airtight container for up to 3 days or refrigerate for a week. They can be frozen for 2-3 months.
