Vegan Love Letter Pastries

Delightful vegan pastries filled with strawberry jam, perfect for breakfast or dessert.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, chilled and cubed
  • 34 tablespoons cold water
  • 1 cup strawberry jam
  • Heart-shaped cookie cutter (for sealing)

Instructions

  1. In a mixing bowl, combine the flour and salt.
  2. Add the chilled vegan butter and mix until the mixture resembles coarse crumbs.
  3. Stir in cold water, one tablespoon at a time, until the dough holds together.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Preheat the oven to 350°F (175°C).
  6. Roll out the chilled dough on a floured surface to about 1/8 inch thick.
  7. Cut the dough into small rectangles or squares.
  8. Spoon a small amount of strawberry jam onto the center of each piece.
  9. Fold the dough over to create an envelope shape and seal the edges with a fork.
  10. Use a heart-shaped cookie cutter to cut out hearts from the scraps for decoration if desired.
  11. Place the pastries on a baking sheet lined with parchment paper.
  12. Bake for 15-20 minutes or until golden brown.
  13. Let cool before serving.

Notes

Best served warm; can dust with powdered sugar for added sweetness.
