A delightful vegan beverage capturing the flavors of fall with creamy coconut milk, pumpkin puree, and warm spices.

  • 4 ounces coconut milk
  • 4 ounces non-dairy milk (almond, oat, or soy)
  • 2 ounces pumpkin puree
  • 1.5 ounces maple syrup
  • 1 tablespoon apple butter
  • 0.5 ounce vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • 2 Oreos (crushed)
  • Vegan whipped cream (for topping)

Instructions

  1. Start by crushing the Oreos until finely crumbled and set aside in a small bowl.
  2. In a blender, combine the coconut milk, non-dairy milk, pumpkin puree, apple butter, pumpkin pie spice, maple syrup, and vanilla extract.
  3. Blend the mixture until it is smooth and creamy.
  4. Take two glasses and fill them with ice.
  5. Divide the blended drink evenly between the two glasses.
  6. Top each glass with the crushed cookie crumbs.
  7. Add a generous swirl of vegan whipped cream on top.
  8. For extra crunch and flavor, sprinkle more cookie crumbs over the whipped cream.
  9. Serve immediately and enjoy!
