Vegan Strawberry Cream Danishes

Delightful vegan danishes filled with strawberries and coconut cream, perfect for breakfast or dessert.

  • 1 sheet of vegan puff pastry
  • 1 cup fresh strawberries, sliced
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut cream
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut it into squares.
  3. In a bowl, mix the sliced strawberries with sugar, cornstarch, and vanilla extract.
  4. Spoon the strawberry mixture onto the center of each pastry square.
  5. Fold the corners of the pastry over the filling to create a danish shape.
  6. Bake for 15-20 minutes until golden brown.
  7. Allow to cool slightly, then top with coconut cream and dust with powdered sugar before serving.

Notes

Best served warm or at room temperature with optional coconut cream drizzle.
