Violet Panna Cotta

A beautiful vegan dessert combining creamy almond and coconut milk with the delicate flavor of wild violets. Perfect for special occasions.

Ingredients

  • 2 cups almond milk
  • 2 cups coconut milk
  • 2 tbsp gelatin
  • 1/2 cup wild violets
  • Juice of 1/2 lemon
  • 1 vanilla bean
  • 2 tbsp maple syrup

Instructions

  1. Soften the gelatin by sprinkling it over 1/2 cup of almond milk in a small bowl. Let it stand for 15-20 minutes.
  2. Grease six cups with coconut oil to help the panna cotta release easily.
  3. In a saucepan, combine the remaining almond milk (1.5 cups) and coconut milk with the vanilla bean. Heat over medium heat, stirring regularly.
  4. When bubbling, remove from heat and add the softened gelatin mixture. Stir until dissolved.
  5. Add wild violets, lemon juice, and maple syrup. Mix well.
  6. Pour the mixture into the greased cups and refrigerate for at least 2 hours to set.

Notes

Serve with fresh berries or a drizzle of honey for added flavor.
