Watermelon Basil Chia Fresca

A delightful summer drink that combines the sweetness of watermelon, freshness of basil, and nutritious chia seeds, topped with sparkling coconut water.

Ingredients

  • 2 cups seedless watermelon cubes (freeze 1 hr for extra chill)
  • 6 basil leaves, gently torn
  • 1 tbsp chia seeds, soaked for 10 min
  • Juice of 1 lime
  • 1 tsp raw honey (or agave)
  • Sparkling coconut water
  • Ice

Instructions

  1. Prepare ingredients by cutting watermelon into cubes; freeze for about one hour.
  2. Blend chilled watermelon cubes, torn basil leaves, lime juice, and honey until smooth.
  3. Pour the mixture through a strainer into a mixing bowl to remove pulp.
  4. Stir in soaked chia seeds into the smooth mixture.
  5. Fill glasses with ice.
  6. Pour watermelon and chia mixture over the ice.
  7. Top with sparkling coconut water, gently stir, and enjoy immediately.

Notes

Best enjoyed fresh, but can be refrigerated for up to 24 hours. Shake or stir before serving again.
