White Christmas Coconut Mojito (Virgin)

A festive and refreshing alcohol-free cocktail with mint, lime, and creamy coconut flavors, perfect for holiday gatherings.

Ingredients

  • Fresh mint: about 20 leaves plus extra sprigs for garnish
  • Limes: 2 limes, cut into wedges for muddling (about 2 tablespoons fresh juice)
  • Coconut milk: 1/2 cup, well shaken
  • Coconut water: 1 cup, chilled
  • Simple syrup or honey: 2 to 3 tablespoons, to taste
  • Vanilla extract: 1/2 teaspoon
  • Pinch of fine salt
  • Club soda or sparkling water: 1/2 cup
  • Ice: crushed or small cubes
  • For the rim: granulated sugar and finely shredded coconut
  • Optional extras: coconut flakes for topping, lime wheels, white edible pearls

Instructions

  1. Prep the glasses by mixing sugar and coconut on a small plate. Run a lime wedge on the rim of each glass and dip to coat.
  2. Muddle the mint and lime in each glass, pressing gently.
  3. In a shaker or jar, combine coconut milk, coconut water, vanilla, salt, and sweetener. Shake for 10 to 15 seconds until foamy.
  4. Divide the coconut mixture between the glasses and top with club soda.
  5. Garnish with mint sprigs, lime wheels, and coconut flakes. Serve immediately.

Notes

Can be made ahead by mixing the coconut base and chilling. Muddle mint and lime in each glass just before serving for the best flavor.
