Perfect Cornbread

A guide to achieving perfect cornbread by avoiding common baking mistakes.

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 eggs, room temperature
  • 1/4 cup melted butter, room temperature

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the cornmeal, flour, baking powder, sugar, and salt.
  3. In another bowl, whisk together the milk, eggs, and melted butter.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Preheat your baking pan in the oven (use cast iron for best results) for about 5 minutes.
  6. Pour the batter into the hot pan and spread it evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool slightly before serving.
