Apple Cinnamon Sheet Cake

A delicious and comforting dessert that combines sweet apples with warm cinnamon, offering a healthier twist for dessert lovers.

  • 3 cups plus 2 tablespoons all-purpose flour (or gluten-free flour blend)
  • 3 large or 6 small Gala or Honey Crisp apples (about 1½ pounds)
  • ⅓ cup packed dark brown sugar
  • 1½ tablespoons ground cinnamon
  • 1½ cups granulated sugar
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • 4 large eggs
  • 1 cup canola oil
  • ½ cup freshly squeezed orange juice
  • 1 tablespoon pure vanilla extract
  • ½ cup powdered sugar
  • 2 teaspoons water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with vegetable shortening and dust with flour.
  2. Peel, core, and slice the apples into ¼-inch thick slices. Toss them with brown sugar and cinnamon.
  3. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  4. In a separate bowl, whisk the eggs. Create a well in the dry ingredients and pour in the canola oil, orange juice, and vanilla extract. Add the beaten eggs and stir until just combined.
  5. Spread about two-thirds of the batter into the prepared pan. Arrange the apple slices over the batter and drop spoonfuls of the remaining batter on top.
  6. Bake for about 40 minutes or until the top is golden and a toothpick comes out clean.
  7. Stir together powdered sugar and water to make the icing.
  8. Drizzle the icing over the warm cake and serve.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend. Adjust sugar to meet dietary needs.
