Apple Pie Bombs

A delicious twist on the classic apple pie, these bite-sized treats are filled with sweetened diced apples and wrapped in soft biscuit dough.

  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 can refrigerated biscuit dough (8 biscuits)
  • 1/2 cup unsalted butter, melted (for coating)
  • 1 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Prepare the Apple Filling: In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add the diced apples, 1/3 cup granulated sugar, and 1 teaspoon of ground cinnamon. Cook this mixture for 4-5 minutes, stirring occasionally until the apples start to soften.
  2. Thicken the Filling: In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Add this to the apple mixture and continue to cook for another 1-2 minutes, or until the filling has thickened. Remove from heat and let it cool slightly.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C), and line a baking sheet with parchment paper.
  4. Prepare the Dough: Flatten each piece of biscuit dough to about 1/4-inch thickness.
  5. Assemble the Apple Pie Bombs: Place a tablespoon of cooled apple filling in the center of each flattened biscuit and seal tightly.
  6. Coat with Butter and Cinnamon Sugar: Dip each dough ball into melted butter and then roll in a mixture of granulated sugar and ground cinnamon.
  7. Bake: Arrange on the baking sheet and bake for 12-15 minutes, or until golden brown.
  8. Serve Warm: Allow to cool slightly before serving for the best flavor.

Notes

These apple pie bombs can be made healthier with sugar substitutes, and they also freeze well for meal prep.
