Ingredients

  • 1 cup raspberries (fresh or thawed)
  • 1 cup Greek yogurt (regular or lactose-free)
  • 1 tablespoon maple syrup or honey
  • 4 strawberries, sliced
  • 2 tablespoons dark chocolate chunks (80% cacao, optional)
  • 2 tablespoons crushed pistachios

Instructions

  1. Mash the raspberries lightly in a bowl with a fork to add texture and color.
  2. In a separate bowl, mix the mashed raspberries, Greek yogurt, and maple syrup until smooth and swirled.
  3. Line a tray or plate with parchment paper and spread the yogurt mixture to ½ inch thickness.
  4. Sprinkle sliced strawberries, chocolate chunks, and crushed pistachios over the top.
  5. Freeze for at least 3–4 hours or until solid.
  6. Once frozen, break into shards using your hands or a knife.
  7. Let sit for 2–3 minutes before serving for the creamiest texture.

Notes

Store bark in an airtight container in the freezer with parchment between layers to prevent sticking. Best enjoyed within 5–7 days. Customize with any fruits, nuts, or chocolate you love!
