Blackberry Lime Cheesecake Popsicles

A refreshing and healthier version of cheesecake, these Blackberry Lime Cheesecake Popsicles offer a delicious treat with high protein and low sugar content, perfect for warm days.

Ingredients

  • 12 oz Fresh blackberries
  • 1 1/2 tablespoons Water
  • Sugar (to taste)
  • 6 oz Cream cheese
  • 4 tablespoons Milk
  • 2 tablespoons Fresh lime juice
  • 1/2 teaspoon Lime zest (optional)
  • 1 1/2 teaspoons Vanilla extract
  • 1/2 cup Powdered sugar

Instructions

  1. Cook the blackberries and water in a medium saucepan over medium heat for 10-15 minutes.
  2. Puree the blackberry mixture in a blender until smooth and refrigerate for 30 minutes.
  3. Prepare the cream cheese mixture with cream cheese, milk, lime juice, lime zest, vanilla extract, and powdered sugar.
  4. Assemble your popsicles by layering the blackberry puree and cream cheese mixture in molds.
  5. Freeze for 4-6 hours until solid.
  6. Remove from molds and enjoy.

Notes

Store in an airtight container in the freezer for up to two weeks. Try substituting blackberries with other berries for varied flavors.
