Blueberry Butterfly Pea Latte Fusion

A visually stunning and healthy beverage combining butterfly pea flower and blueberries, perfect for any time of day.

Ingredients

  • 1 teaspoon butterfly pea flower powder (or 2 tablespoons dried flowers)
  • 1/2 cup hot water (about 160-170°F)
  • 1/2 cup fresh or frozen blueberries
  • 1 cup milk of choice (whole, oat, or almond)
  • 2 tablespoons honey or agave
  • 1/4 teaspoon vanilla extract
  • Pinch of sea salt
  • Ice cubes (for iced version)
  • Fresh blueberries and butterfly pea flowers for garnish

Instructions

  1. If using dried butterfly pea flowers, steep them in hot water for 3-4 minutes, then strain. If using powder, whisk the powder with hot water until completely dissolved.
  2. Pour the butterfly pea liquid into your serving cup (it should be a vibrant blue-purple).
  3. In a small saucepan, gently warm the milk over medium heat (do not boil).
  4. Add honey and vanilla extract to the milk, stirring until the honey dissolves completely.
  5. For extra creaminess, froth the milk using a milk frother or whisk vigorously.
  6. In a blender, blend the fresh blueberries with 2 tablespoons of the warm milk to create a blueberry layer.
  7. Carefully pour the blueberry mixture into the butterfly pea liquid (it will create a beautiful gradient).
  8. Top with frothed milk, pouring it slowly over the back of a spoon to create distinct layers.
  9. Garnish with fresh blueberries and dried butterfly pea flowers.
  10. Serve immediately to enjoy the vibrant colors before they blend.

Notes

For a vegan version, use non-dairy milk and agave or maple syrup instead of honey.
