Brazilian Onion Pot Roast

A tender pot roast slowly cooked with onions, garlic, and simple seasonings, resulting in an incredibly rich and flavorful family meal.

Ingredients

  • 1 kg beef (chuck roast, bottom round, or rump roast)
  • 2 large onions, sliced into rings
  • 3 garlic cloves, minced or crushed
  • 2 tablespoons vegetable oil or olive oil
  • Salt to taste
  • Ground black pepper to taste
  • Paprika to taste
  • Colorau (annatto powder) to taste
  • 1 cup (200 ml) water
  • Chopped parsley and green onions for garnish

Instructions

  1. Season the beef with salt, pepper, garlic, colorau, and paprika on all sides.
  2. Sear the meat in oil in a pressure cooker until browned on all sides.
  3. Arrange half of the onions in the pot, place the beef on top, and cover with the remaining onions.
  4. Add 1 cup of water around the sides of the meat.
  5. Pressure cook the beef over medium heat for about 30 minutes.
  6. Release the pressure and check the beef for tenderness.
  7. Simmer the cooking liquid to reduce and thicken the sauce.
  8. Finish by garnishing with chopped parsley and green onions before serving.

Notes

This dish pairs well with rice, potatoes, or vegetables and is perfect for family meals.
