Cherry Syrup

A delightful and healthy homemade cherry syrup, perfect for sweetening drinks and dishes without added preservatives.

Ingredients

  • 4 cups sour cherries, washed and pitted
  • 2 cups granulated sugar
  • 2 cups water
  • 2 tablespoons lemon juice
  • Sparkling water for serving

Instructions

  1. Wash the cherries thoroughly, then remove their stems and pits.
  2. Combine the pitted cherries, sugar, and water in a large saucepan.
  3. Simmer on the stovetop for 10-15 minutes, until the cherries start to get soft.
  4. Turn the heat off and use a masher to mash the cherries.
  5. Allow the mixture to sit and steep for about 25 minutes.
  6. Strain out the solids using a fine mesh strainer or cheesecloth, saving the syrup.
  7. Stir the lemon juice into the syrup.
  8. Place the syrup in the fridge to chill.
  9. Serve by adding 1/4 cup of cherry syrup to each glass filled with ice and top with chilled sparkling water.

Notes

Cherry syrup can be stored in an airtight container in the fridge for up to 4 weeks. Freeze in ice cube trays for longer storage.
