Cowboy Caviar Jalapeno Popper Cheese Log

A delightful combination of cowboy caviar and jalapeno poppers into a fun cheese log, packed with protein and fiber.

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup corn, canned or frozen, thawed
  • 1/2 cup diced tomatoes, fresh or canned, drained
  • 1/4 cup red onion, finely chopped
  • 1/4 cup jalapeños, diced, fresh or pickled
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup crushed tortilla chips for coating

Instructions

  1. In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Mix until it’s super smooth and well mixed.
  2. Toss in the black beans, corn, diced tomatoes, red onion, jalapeños, lime juice, garlic powder, cumin, salt, and pepper. Stir everything together until it’s all evenly distributed.
  3. Transfer your cheesy mixture onto a sheet of plastic wrap. Use your hands to shape it into a log or a nice cylinder. Wrap it up tightly and pop it in the fridge for at least 120 minutes, or until it’s firm and ready to impress.
  4. Once chilled, take the log out of the wrap and roll it in the crushed tortilla chips, pressing gently to make sure they stick.
  5. Place your cheese log on a serving platter, sprinkle with fresh cilantro, and get ready to serve it up with tortilla chips or fresh veggies for dipping. Enjoy every savory bite!

Notes

For a healthier version, substitute cream cheese with low-fat or Greek yogurt cream cheese.
