Cranberry Pecan Cream Cheese Stuffed Celery

A delightful and nutritious snack, these cream cheese stuffed celery sticks are filled with a creamy mixture of cranberries and pecans, making them a perfect low-calorie option.

  • 8 celery stalks
  • 8 ounces cream cheese, softened
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pecans, toasted and chopped
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by washing the celery stalks thoroughly. Cut them into 3–4 inch pieces, then pat them dry and set aside.
  2. In a mixing bowl, combine the softened cream cheese, chopped cranberries, toasted pecans, honey, vanilla extract, ground cinnamon, and a pinch of salt. Mix it all together until it’s creamy and well-blended.
  3. With a butter knife or small spatula, generously fill each celery piece with the delicious cream cheese mixture.
  4. Arrange your stuffed celery “snow logs” on a serving platter, and for a pop of color, sprinkle some fresh parsley on top if you like.
  5. Enjoy them right away or pop them in the fridge until you’re ready to serve!

Store leftovers in an airtight container in the fridge for up to three days. Best enjoyed fresh.
