Creamy Mosaic Gelatin

A crowd-pleasing dessert featuring colorful gelatin cubes folded into a sweet cream base, perfect for potlucks.

Ingredients

Scale
  • 1 packet mango gelatin
  • 1 packet strawberry gelatin
  • 1 packet grape gelatin
  • 1 packet lemon gelatin
  • 3 cups hot water per packet (12 cups total)
  • 1½ cans sweetened condensed milk, or to taste
  • 1 teaspoon vanilla extract
  • 4 cups sour cream (crema ácida)
  • 1 pinch of salt
  • 1 can evaporated milk, or more if you want it looser
  • 2 cans fruit cocktail, with the syrup
  • ½ cup walnuts, roughly chopped
  • ½ cup almonds, sliced or chopped
  • ½ cup dry shredded coconut

Instructions

  1. Dissolve each packet of gelatin in 3 cups of hot water and stir until no granules remain. Pour into containers, cover, and chill until fully set, at least 4 hours or overnight.
  2. Unmold each gelatin onto a board and cut into small cubes, about ½ inch, keeping colors separate.
  3. In a large bowl, whisk together the condensed milk, vanilla, sour cream, salt, and evaporated milk until smooth.
  4. Stir in both cans of fruit cocktail with their syrup, walnuts, almonds, and shredded coconut.
  5. Add the gelatin cubes and fold gently with a spatula until colors are evenly scattered.
  6. Cover and refrigerate until well cold, at least 2 hours. Serve in a bowl or glass trifle dish.

Notes

Make the gelatin a day ahead for convenience. Toasted nuts enhance flavor. Keep covered in the fridge for best freshness.
