Creamy Tuscan Chicken and Gnocchi

A delicious and healthy one-pan meal featuring chicken thighs, gnocchi, and a creamy Tuscan sauce with sun-dried tomatoes, spinach, and artichokes.

Ingredients

Scale
  • 1.5 lb skinless boneless chicken thighs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 16 oz potato gnocchi
  • 4 oz sun-dried tomatoes
  • 6 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning or Herbs from Provence
  • 1/2 teaspoon paprika
  • 5 oz fresh spinach
  • 7 oz canned artichoke hearts, chopped
  • 1/4 teaspoon red pepper flakes, to taste
  • 1 teaspoon fresh thyme leaves, no sprigs

Instructions

  1. Season and cook chicken thighs: Season the chicken thighs with Italian seasoning, paprika, salt, and black pepper. In a skillet, heat olive oil over medium heat for about 2 minutes. Place the chicken thighs in the skillet, cooking on one side for around 5 minutes. Then, flip the chicken over, lower the heat, and continue cooking for another 5 minutes until done. Remove the chicken and set aside.
  2. Add gnocchi and sauce ingredients: In the same skillet, without cleaning, add the potato gnocchi, sun-dried tomatoes, and minced garlic. Stir for about 30 seconds to 1 minute. Pour in the chicken broth and heavy cream, adding the remaining Italian seasoning and paprika. Bring to a boil, cover, and let cook for approximately 5 minutes over medium heat.
  3. Incorporate spinach and artichokes: Once the gnocchi is tender, add fresh spinach and chopped artichokes. Cook until the spinach wilts, about 5 minutes. Taste and season with more salt if needed.
  4. Return chicken and serve: Return the cooked chicken thighs to the skillet. Gently reheat them in the sauce and sprinkle red pepper flakes and thyme before serving.

Notes

For a lighter version, swap heavy cream for half-and-half or a plant-based alternative. This dish is great for meal prep and can be stored in the refrigerator for up to 3 days.
