Creamy Vegan Green Bean Casserole

A healthier twist on the classic green bean casserole, this creamy vegan version is delicious and perfect for meal prep.

  • 1 pound Green Beans
  • 1 cup Mushrooms, sliced
  • 1 cup Vegetable Broth
  • 1 cup Coconut Milk
  • 1/2 cup Gluten-Free Breadcrumbs
  • 2 cloves Garlic, minced
  • 1 Onion, chopped
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the green beans in salted boiling water for 3-5 minutes until bright green and tender.
  3. Drain the blanched green beans and set aside.
  4. Sauté onions and garlic in olive oil until onions are translucent.
  5. Cook sliced mushrooms until soft in the skillet.
  6. Add vegetable broth and coconut milk, then bring to a simmer.
  7. Combine blanched green beans with the sauce mixture.
  8. Transfer the mixture to a baking dish and spread evenly.
  9. Sprinkle gluten-free breadcrumbs on top.
  10. Bake for 25-30 minutes until golden and bubbly.
  11. Serve warm and enjoy!

Notes

Perfect for meal prep and great as leftovers. Can be stored for up to 4 days in the fridge.
