Crock Pot Hamburger Soup

A delicious and healthy Crock Pot Hamburger Soup packed with lean protein and vibrant vegetables. Perfect for weight loss or meal prep.

  • 1 T Olive Oil
  • 1 Onion, Diced
  • 2 lb Lean Ground Beef
  • 4 Carrots, Chopped
  • 3 Celery Stalks, Chopped
  • 2 Yukon Potatoes, Cut into Bite-Sized Pieces
  • 3 Cans Fire-Roasted Tomatoes (15 oz. each)
  • 3–4 Garlic Cloves, Minced
  • 1 Cup Tomato Sauce
  • 1 tsp Worcestershire Sauce
  • 1 T Italian Seasoning
  • 1/2 tsp Onion Powder
  • 1/2 tsp Sea Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Red Pepper Flakes (Optional)
  • 4 Cups Beef Broth
  • 2 Bay Leaves
  • 6 oz Tomato Paste
  • 1 Cup Frozen Corn
  • 1/2 to 1 Cup Frozen Peas

Instructions

  1. Add the diced potatoes, chopped carrots, chopped celery, fire-roasted tomatoes, tomato sauce, and bay leaves to the Crock Pot. Stir well.
  2. Heat olive oil in a skillet over medium-high heat. Sauté the diced onion until translucent, about 5 minutes. Add ground beef and cook until browned.
  3. Drain excess grease and transfer beef and onions to the Crock Pot.
  4. Pour in beef broth and Worcestershire sauce and stir until well mixed.
  5. Cover the Crock Pot and cook on low for 6-8 hours or high for 3-5 hours.
  6. Stir in the frozen peas, corn, and tomato paste 15-20 minutes before serving.
  7. Ladle the soup into bowls and serve, topping with shredded cheese if desired.

Notes

Use gluten-free Worcestershire sauce and beef broth for a gluten-free version. Store leftovers in an airtight container for up to 4 days in the fridge.
