Crockpot Beef Stew

A comforting and healthy version of the classic Crockpot Beef Stew, packed with protein and vegetables.

  • 3 lb Chuck Roast
  • Salt
  • Pepper
  • Garlic Powder
  • 1/2 Cup Flour
  • 4 tbsp Butter
  • 1 Cup Cabernet Sauvignon Red Wine
  • 1 1/2 Cups Celery (Chopped)
  • 2 Cups Carrots (Chopped)
  • 1 Onion (Chopped)
  • 2 lb Yukon Gold Potatoes (Chopped)
  • 1/2 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tbsp Minced Garlic
  • 6 oz Tomato Paste
  • 2 tbsp Worcestershire Sauce
  • 3 Cups Beef Broth
  • 2 Bay Leaves
  • 1 1/2 Cups Frozen Peas

Instructions

  1. Prep the Veggies: Begin by washing and chopping your vegetables. Chop the onion, celery, and carrots into larger bite-size pieces. Scrub the Yukon Gold potatoes and chop them similarly.
  2. Season the Meat: Take your chuck roast and cut it into cubes. In a bowl, season the meat with salt, pepper, and garlic powder. Toss the seasoned meat with 1/2 cup of flour until it’s well coated.
  3. Brown the Meat: Heat a large skillet over medium-high heat and melt 2 tablespoons of butter. Once hot, add half of the seasoned meat to the skillet. Brown the meat on all sides until golden. Remove and repeat with the remaining meat.
  4. Deglaze the Skillet: Pour 1 cup of red wine into the hot skillet. Use a spatula to scrape up the browned bits from the bottom.
  5. Assemble in the Crockpot: Spray the inside of the crockpot with cooking spray. Add the browned meat, deglazed red wine, chopped vegetables, and seasonings. Stir to combine.
  6. Add Remaining Ingredients: Stir in minced garlic, tomato paste, Worcestershire sauce, and beef broth, ensuring the meat is submerged. Place bay leaves on top.
  7. Slow Cook the Stew: Cover and cook on low for 8-10 hours until the meat is tender.
  8. Add Frozen Peas: About 15-20 minutes before serving, add the frozen peas to the stew.
  9. Serve and Enjoy: Once the stew is done, stir and serve in bowls with crusty bread on the side.

Notes

This stew is excellent for meal prep and can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
