Crockpot Cabbage Roll Casserole

A quick and healthy version of traditional cabbage rolls, packed with flavor and nutrients, perfect for meal prep.

Ingredients

  • 1 large head of cabbage, chopped
  • 1 pound ground beef or turkey
  • 1 cup uncooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Brown the meat in a large skillet over medium heat until fully cooked.
  2. Sauté the onion and garlic in the same skillet until the onion becomes translucent.
  3. Combine the cooked meat, sautéed onion and garlic, rice, crushed tomatoes, tomato sauce, Worcestershire sauce, oregano, basil, salt, and pepper in a large mixing bowl.
  4. Layer half of the cabbage in the bottom of the crockpot, followed by half of the meat mixture. Repeat with remaining cabbage and meat mixture.
  5. Cook on low for 6-8 hours or high for 3-4 hours, until the cabbage is tender.
  6. Add cheese during the last 30 minutes of cooking if desired.

Notes

A great meal prep option; can be made low-carb or diabetic-friendly by substituting rice with cauliflower rice.
