Cucumber Peanut Butter Salad

A crisp, fresh salad featuring cucumber strips mixed with a creamy peanut dressing, herbs, chilies, and sesame seeds.

Ingredients

  • 1 kg (2.2 lb) cucumber, chopped into strips
  • 1/3 cup fresh parsley, chopped
  • 2 fresh chilies, finely chopped
  • 2 tbsp sesame seeds, toasted
  • 1 1/2 tbsp peanut butter
  • 1 1/2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp maple syrup
  • 1 tsp rice vinegar
  • 2 cloves garlic, minced

Instructions

  1. Chop cucumbers into thin strips and place in a large bowl.
  2. Add parsley, chilies, and sesame seeds.
  3. In a separate bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, maple syrup, and garlic until smooth. Add a splash of warm water if needed to reach a pourable consistency.
  4. Pour dressing over cucumbers and toss well.
  5. Serve immediately, garnished with extra sesame seeds if desired.

Notes

Store the salad in an airtight container in the fridge for up to 2 days; for best texture, keep dressing separate until serving.
