Ingredients

Scale
  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 0.5 cups unsalted butter
  • 3 large eggs
  • 0.5 cups milk
  • 1.5 tsp baking powder
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 4 cups whole milk
  • 0.75 cups granulated sugar
  • 5 large egg yolks
  • 0.5 cups cornstarch
  • 3 tbsp unsalted butter
  • 2 tsp vanilla extract
  • 0.5 cups all-purpose cream
  • 1 can fruit cocktail
  • 1 cup canned peach slices
  • 0.5 cups fresh strawberries
  • 2 tbsp unflavored gelatin powder
  • 0.5 cups cold water
  • 2 cups water
  • 0.5 cups granulated sugar
  • 1 tsp lemon juice
  • 8–10 canned peach slices for decoration
  • 8–10 maraschino cherries for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9 × 13-inch baking pan.
  2. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet ingredients, alternating with the milk, and stir until just combined.
  6. Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Allow the cake to cool completely in the pan.
  8. In a bowl, whisk together the egg yolks, granulated sugar, cornstarch, and a splash of whole milk until smooth.
  9. In a saucepan, heat the remaining milk until steaming. Gradually whisk the hot milk into the egg mixture and then return it all to the saucepan.
  10. Cook over medium-low heat, stirring constantly, until the mixture thickens and bubbles gently, about 5-7 minutes.
  11. Remove from heat and stir in unsalted butter, vanilla extract, and all-purpose cream.
  12. Cover the surface with plastic wrap and allow it to cool until just warm.
  13. Once the sponge cake is cool, place it in a clear glass casserole dish.
  14. Spread the custard evenly over the cake, then arrange the drained fruit cocktail and optional strawberry slices beautifully on top.
  15. Sprinkle the gelatin powder over the cold water and let it bloom for 5 minutes.
  16. In a pot, heat the remaining water with the sugar until dissolved, then remove from heat.
  17. Stir in the bloomed gelatin and, if desired, the lemon juice. Allow to cool until lukewarm but still pourable.
  18. Arrange the canned peach slices and maraschino cherries on top of the fruit layer.
  19. Carefully pour the gelatin mixture over the fruit in a thin, even layer.
  20. Refrigerate the assembled Delicious Fruit Cream for 4-6 hours, or overnight, until the custard is firm and the gelatin is fully set.
  21. When ready, cut into squares to reveal the delightful layers.
