Kale Salad with Pear, Walnuts, and Maple-Balsamic Vinaigrette

A vibrant kale salad featuring crisp pears, candy-coated walnuts, and drizzled with a sweet and tangy maple-balsamic vinaigrette, perfect for impressing guests or brightening up your lunch.

Ingredients

  • 1 bunch kale, chopped
  • 2 pears, sliced
  • 1 cup walnuts
  • 2 tablespoons sugar or maple syrup
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon maple syrup
  • Salt and pepper to taste

Instructions

  1. Massage chopped kale with a bit of olive oil for about 2 minutes until softened.
  2. In a nonstick pan, warm up walnuts and sugar over medium heat, stirring until coated and sugar melts (about 4-5 minutes).
  3. Let the caramelized walnuts cool on parchment paper.
  4. In a separate bowl, whisk together olive oil, balsamic vinegar, and maple syrup to create the vinaigrette.
  5. Toss the massaged kale with sliced pears and dressing just before serving.
  6. Top with candied walnuts and serve immediately.

Notes

Juice pears with lemon to prevent browning and consider using pre-cooked beets for an easier option. Let salad sit before serving to soak up flavors.
