These Easy French Dip Sliders are loaded with savory roast beef, melty provolone, and caramelized onions, all baked into soft rolls with a buttery onion crust. Served with rich au jus for dipping, they’re the ultimate comfort food for parties, game days, or busy weeknights.

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 sweet rolls (kept intact in a sheet)
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef
  • Fresh chopped parsley for garnish (optional)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix
  • 1 packet au jus gravy mix
  • 3 cups water

Instructions

  1. In a skillet over medium heat, melt 3 tablespoons of butter. Add onions and cook 12–15 minutes until golden and soft. Stir in thyme, salt, and pepper. Remove from heat.
  2. Preheat oven to 350°F (175°C). Slice sweet rolls horizontally and place the bottom half in a 11×7-inch baking dish.
  3. Layer half the provolone over bottom rolls. Add roast beef evenly, then top with caramelized onions and remaining provolone. Cover with top half of rolls.
  4. Mix melted butter with dried onion soup mix. Brush over roll tops evenly.
  5. Cover with foil and bake 25 minutes. Uncover and bake 5 more minutes until golden brown.
  6. Meanwhile, prepare au jus by simmering the packet mix with 3 cups water until slightly thickened. Keep warm.
  7. Cut sliders apart, garnish with parsley if desired, and serve warm with au jus on the side for dipping.

Notes

Caramelize onions up to 2 days ahead. Assemble sliders in advance and bake before serving. For best flavor, use sweet rolls like Hawaiian, and layer cheese both under and over the meat to prevent soggy bottoms.
