Easy Mint Mojito Syrup

A refreshing and easy-to-make mint mojito syrup perfect for creating healthier mojitos.

Ingredients

  • 200g (7 oz) white caster sugar
  • 100g (3.5 oz) water
  • A large handful of fresh mint leaves
  • Juice of 1 large lime
  • Extra fresh mint for garnish
  • Fresh lime wedges for garnish
  • White rum (1 shot per serving)
  • Crushed or cubed ice
  • Chilled soda water to top off

Instructions

  1. Combine sugar and water in a small saucepan over medium heat, stirring until sugar dissolves.
  2. Infuse the syrup by adding mint leaves and letting it sit for 15 minutes.
  3. Strain the syrup through a strainer into a clean bowl or jar.
  4. Add lime juice to the strained syrup and stir to combine.
  5. Cool the mixture to room temperature and store in a clean bottle.
  6. Serve by mixing mint syrup, white rum, ice, and mint leaves in a shaker, then pouring into a glass and topping with soda water and garnishing with lime wedges.

Notes

Use sugar substitutes for a low-calorie version. Store in the fridge for up to two weeks.
