Fiesta Cowboy Caviar Cheese Log

A fun and nutritious cheese log blending creamy cheeses with fresh vegetables and beans, perfect for parties or healthy snacking.

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (canned or frozen)
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions

  1. In a mixing bowl, beat together the softened cream cheese and shredded cheddar cheese until the mixture is smooth and creamy.
  2. Stir in the black beans, corn, diced tomatoes, red onion, cilantro, jalapeño, lime juice, chili powder, cumin, salt, and pepper. Combine everything until it’s evenly mixed.
  3. Shape the cheesy goodness into a log or ball, and then wrap it tightly in plastic wrap.
  4. Pop it into the fridge for at least 120 minutes. This chilling time helps the flavors meld and allows the log to firm up perfectly.
  5. When you’re ready to serve, unwrap the log and, if you’d like, roll it in some extra cilantro or diced tomatoes for a vibrant garnish.
  6. Serve with crispy tortilla chips and enjoy every flavorful bite!

Notes

This cheese log can be stored in the refrigerator for up to a week. For freezing, wrap tightly in plastic wrap and store in a sealed container.
