  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (canned or frozen)
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions

  1. In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Mix until it’s beautifully smooth and creamy.
  2. Now, let’s add some flavor! Toss in the black beans, corn, diced tomatoes, red onion, cilantro, jalapeño, lime juice, chili powder, cumin, salt, and pepper. Stir until everything is evenly mixed together.
  3. Shape your delicious mixture into a log or a ball, and then wrap it up tightly in plastic wrap.
  4. Pop it into the fridge for at least 120 minutes. This is the magic moment where all those flavors meld together and the cheese log firms up!
  5. Once it’s chilled and ready, unwrap your masterpiece. If you want to dress it up a bit, roll it in some extra cilantro or diced tomatoes for an extra pop of color.
