Frozen Fruit Salad

A delightful and healthy frozen treat perfect for hot days, packed with fruits and creamy texture.

Ingredients

  • 6 ounces cream cheese, softened
  • 1 cup mayonnaise
  • 1 cup heavy cream
  • 3½ cups fruit cocktail, well drained
  • ½ cup drained Maraschino cherries
  • 2½ cups mini marshmallows

Instructions

  1. Prepare the cherries by quartering them and setting aside.
  2. Cream together the softened cream cheese and mayonnaise until smooth.
  3. Add the quartered cherries, fruit cocktail, and mini marshmallows to the cream cheese mixture and stir gently.
  4. Whip the heavy cream in a separate bowl until stiff peaks form.
  5. Mix the whipped cream into the fruit mixture carefully, folding gently.
  6. Freeze the mixture in a 9×13 glass pan for 4-6 hours until solid.
  7. Serve by removing from the freezer 10-15 minutes before cutting into squares.

Notes

For a healthier version, use Greek yogurt instead of cream cheese and mayonnaise. This dessert can be made diabetes-friendly by using low-sugar fruit cocktail.
