Get Well Chocolate Fudge Skillet Cake

This rich, fudgy chocolate cake is perfect for those in need of a comforting treat, and it’s gluten-free too!

  • 1 cup Gluten-free flour (e.g., Pamela’s Bread Mix & Flour Blend)
  • 1/2 teaspoon Baking soda
  • 1 cup Sugar
  • 1/4 teaspoon Salt
  • 1/4 cup Butter
  • 1/4 cup Vegetable oil
  • 2 tablespoons Cocoa powder
  • 1/4 cup Water
  • 1/4 cup Milk
  • 1 Egg
  • 1 teaspoon Vanilla
  • 1/4 cup Butter (for frosting)
  • 2 tablespoons Cocoa powder (for frosting)
  • 3 tablespoons Milk (more if needed to thin it out)
  • 1/2 cup Roasted almonds (chopped)
  • 2 cups Powdered sugar
  • 1/2 teaspoon Vanilla (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine gluten-free flour, baking soda, sugar, and salt.
  3. In a small saucepan, heat 1/4 cup of butter, vegetable oil, cocoa powder, water, and milk over medium heat until melted and well combined.
  4. Let the mixture cool slightly before adding it to the dry ingredients.
  5. Add the egg and vanilla, stirring until everything is combined and smooth.
  6. Pour the batter into a greased skillet or baking pan.
  7. Bake for about 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the skillet for a few minutes before transferring to a wire rack.
  9. To prepare the frosting, beat together 1/4 cup of butter, cocoa powder, and milk until smooth.
  10. Gradually add the powdered sugar and mix until well combined.
  11. Add 1/2 teaspoon of vanilla and stir until creamy and easy to spread.
  12. Spread the frosting over the top of the cooled cake, allowing it to drip over the edges if desired.
  13. Sprinkle chopped roasted almonds on top if you like, and serve warm or at room temperature.

Notes

Store leftover cake in an airtight container at room temperature for 3-4 days, or refrigerate for about a week. For longer storage, wrap and freeze the cake, lasting up to 3 months.
