A refreshing and nutritious salad packed with crunchy broccoli, sweet Honeycrisp apples, and delightful dried cranberries.

  • 4 cups broccoli florets, chopped
  • 1 large Honeycrisp apple, diced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup red onion, finely diced
  • 1/2 cup shredded sharp cheddar cheese (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste

Instructions

  1. Prepare the Salad: In a large mixing bowl, combine the chopped broccoli, diced Honeycrisp apple, dried cranberries, nuts, red onion, and cheddar cheese if you’re using it. Give it a gentle toss to mix everything together nicely.
  2. Make the Dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until the mixture is smooth and creamy.
  3. Assemble & Chill: Pour the dressing over your salad and toss everything until well coated. Cover the bowl and pop it in the refrigerator for at least 30 minutes to let those flavors meld beautifully.
  4. Serve & Enjoy: Just before serving, give the salad one last toss. Serve it chilled, and savor every crisp, creamy bite!
