Italian Tortellini Pasta Salad

A healthy and delicious pasta salad loaded with protein and fresh vegetables, perfect for meal prep and summer gatherings.

  • 8 oz Cheese Tortellini
  • 1 cup Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • 1 Bell Pepper, diced
  • 1/2 Red Onion, diced
  • 1/4 cup Extra Virgin Olive Oil
  • 1 tbsp Italian Seasoning
  • Salt and Pepper to taste

Instructions

  1. Bring a large pot of water to a boil and add a pinch of salt.
  2. Add the cheese tortellini and cook according to package directions, about 3 to 5 minutes.
  3. Carefully pour the tortellini into a colander to drain the water.
  4. Rinse the tortellini under cold water to cool it down.
  5. Chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  6. Add the cooled tortellini and chopped vegetables to a large mixing bowl.
  7. Drizzle with olive oil, sprinkle with Italian seasoning, and season with salt and pepper.
  8. Toss everything gently until evenly mixed.
  9. Cover and chill in the refrigerator for at least 30 minutes.
  10. Serve cold as a refreshing side dish or light meal.

Notes

For a gluten-free option, use gluten-free tortellini. This salad can be stored in the fridge for up to 5 days.
